Aloo dum recipe


Ingredients Required:
1. Refined oil
2. Cumin Seeds
3. Mustard Seeds
4. Tomatoes - 3 (cut into small pieces)
5. Potato - 4 (Remove the skin and cut into small cubes)
6. Turmeric Powder
7. Garam Masala Powder
8. Coriander Powder
9. Chilli Powder
10. Water - 2 tumblers
11. Rice flour
12. Salt
13. Coriander leaves - to garnish

Method:
1. On Medium Low Heat, Heat the Pan first and put Oil in Pan.
2. When oil is ready (you can throw one mustard seed if it sizzles then oil is ready). Add mustard seeds.
3. When mustard Seeds splutter, put cumin seeds.
4. Add finely cut tomatoes and potatoes and mix well.
5. To this add turmeric powder,garam masala powder,coriander powder,chilli powder and salt.
6. Add 2 tumblers of water and mix well and place this in a pressure cooker. Leave it for 3 whistles.
7. Mix 2 spoons of rice flour in 1/4 cup of water and pour in the vegetables. This is done to get consistency.
8. After this, heat the pan and add the cooked vegetables in it. Then let it boil. Then add the mixed rice flour content to it.
9. Garnish with Coriander Leaves and Onions.
10. Serve with Puris, Parathas, Chapatis or Rice.

Channa Masala Recipe...


Ingredients Required:
1. Mustard seeds
2. Refined oil
3. Tomatoes (3 - 4)
4. Big Onion - 1 no
5. Channa - Boiled in cooker(6 whistles)
6. Turmeric Powder
7. Dhaniya Powder or coriander powder
8. Garam masala Powder
9. Channa Masala Powder
10. Salt
11. Ginger Garlic Paste
12. Green Chillies - 2 (chopped)
13. Coriander leaves and Big onion (to garnish)

Method:

1.Boil Channa in cooker till it becomes soft (Eg:7 whistles)
2.On Medium Low Heat, Heat the Pan first and put Oil in Pan.
3.When oil is ready (you can throw one mustard seed if it sizzles then oil is ready). Add mustard seeds.
4.When mustard Seeds splutter, add Garlic and Ginger Paste.
5.Add chopped Onions  and add a pinch of Salt and fry till they turn brown (Adding salt while frying Onions makes it quicker to fry Onions)
6.Add coriander powder and fry for some time till it becomes light brown.
7.Add turmeric powder & chilli powder and Salt to taste.
8.Add Garam Masala and Channa Masala and again fry for some time.
9.Add chopped green chillies
10.Add Channa into the Pan without water and stir so that it gets mixed up well.
11.Add the same water which was left in pressure cooker while boiling Channa.
12.Cook the Channa with gravy for 8-12 min’s till gravy dries (but Channa or Masala should not burn).
13.Garnish with Coriander Leaves and Onions.
14.Serve with Puris, Parathas, Chapatis or Rice.
